Babagannus Recipe


  • 5 eggplants
  • 2 tomatoes
  • 3 green peppers
  • 1 capsicum pepper
  • 2 cloves of garlic
  • 1 onion
  • 7-8 sprigs of parsley
  • 4-5 sprigs of fresh mint
  • 1/2 tablespoon of extra virgin olive oil
  • 2 tablespoons of pomegranate syrup
  • 1/2 lemon juice 1 tablespoon vinegar

Preparation Of

Roast the eggplants, peppers and tomatoes. Put it in a bag. Sweat for 10 minutes. Peel the skins and chop finely. Put it in a wide bowl. Crush the garlic in a mortar. Finely chop the onion. Finely chop the parsley and mint. Add it to the eggplants. Add pomegranate syrup, olive oil, lemon juice, vinegar and salt and mix. Enjoy your meal.
