Beet Bulgur Salad Recipe


  • 1 cup bulgur wheat
  • 2 beets
  • 3 glasses of water
  • 1/2 bunch of parsley
  • 1/2 bunch dill
  • 4-5 sprigs of fresh mint leaves
  • 4-5 sprigs of spring onions
  • 4 tablespoons of boiled corn
  • 4 tablespoons of coarsely chopped walnuts
  • Feta cheese cubes
  • Lemon juice
  • Extra Virgin Olive Oil
  • Salt

Preparation Of

Peel the skins of the beets, add water and salt and boil them. Add bulgur to the boiling water and cook until the water evaporates and leave to cool. Grate the beets with the coarse part of the grater. Wash and drain the greens thoroughly. Finely chop. In a large bowl, add bulgur, beetroot, greens, corn, walnut kernels, lemon juice, olive oil and salt and mix them all. Transfer to a serving plate and sprinkle with cheese cubes. Enjoy your meal.
