Black-eyed Beet Salad Recipe


  • 2 medium beets
  • 2 cloves of garlic
  • 1 cup boiled kidney beans
  • 4 sprigs of spring onions
  • 7-8 sprigs of parsley
  • 4-5 sprigs of fresh rosemary

For the sauce;

  • 1 coffee cup of extra virgin olive oil
  • 4 tablespoons of vinegar
  • juice of 1 lemon
  • zest of 1/2 lemon
  • 1 tablespoon of paprika
  • 1 tablespoon of thyme
  • Salt

Preparation Of

Put the garlic, beets and enough water to cover in the pot and boil them until they are soft. Filter your water. Peel the skins and dice them. Transfer your beets to the mixing bowl. Finely chop the garlic you use for boiling and mix it all together with the black-eyed peas.
Remove to serving plate. Mix the sauce ingredients. Hover over it. Enjoy your meal.
