Closed Bafra Pita Recipe

Materials

  • 300 g lukewarm water
  • 1 teaspoon dry yeast
  • 1 tablespoon of butter
  • 1 tablespoon of yogurt
  • 1 teaspoon salt
  • Half a kilo of flour

For the stuffing with minced meat;

  • Half kilo of ground beef
  • 3 onions
  • 1 tablespoon of butter
  • 1 teaspoon salt
  • 1 teaspoon of black pepper

Over;

  • up to 3 tablespoons of butter

Preparation Of

First, let’s prepare the stuffing. Let’s chop the onions. Let’s heat the pan well, throw the minced meat into it and fry it well and add the onions.
Add 1 tablespoon of butter, salt and pepper and mix well. Then reduce the heat and continue to cook for about 25 minutes, stirring occasionally, by pulling itself slowly over low heat.
It is important that the onions are well caramelized. While the minced meat continues to be roasted, you can prepare the dough.
Add dry yeast to 300 g of water and mix. Put half a kilo of flour into the kneading cabinet and sprinkle 1 teaspoon of salt. Make a hole in the middle and add 1 full tablespoon of yogurt.
Add 1 tablespoon of butter to the yeast water as it is warm. We put it in the fermented water as it will mix better with the dough in warm water.
Let’s add the butter and the flour after mixing it, and start kneading. Get a soft dough that will not stick to the hand.
Take a tangerine-sized meringue from the dough. It makes 7 meringues in total. Cover it with a cloth and leave it for 10-15 minutes.
Cover the minced meat and let it cool. Meanwhile, flour the counter and open each meringues lengthwise.
Take the excess flour, put 2-3 tablespoons of minced meat in it, and connect the long edges with your hand in the middle and squeeze the two ends.
Set your oven to its highest temperature. Mine was 300 degrees so I brought it there. If you have a baking stone, build it on it.
If you don’t have it, use your baking tray by turning it upside down. Put your baking tray in the second part of the oven from the bottom.
Put the pita in the heated oven and take it out of the oven for about 10 minutes when it is browned and spread the butter on it while it is hot. Enjoy your meal.
