Cracked Olives Bean Salad Recipe

Materials

  • 1 tablespoon of beans
  • 1/2 bunch of lamb’s ears
  • 1/2 bunch arugula
  • 5-6 sprigs of fresh spinach leaves
  • 5-6 sprigs of dill
  • 2-3 sprigs of fresh mint
  • 4-5 sprigs of parsley
  • 3 spring onions
  • 1 capsicum finely chopped
  • 10-15 crushed olives, pitted

For the above;

  • pomegranate seed

For the sauce;

  • 1 coffee cup of extra virgin olive oil
  • 2 tablespoons of pomegranate molasses
  • 1 tablespoon of vinegar
  • 1 clove of garlic crushed
  • 1/2 tablespoon of black pepper
  • juice of 1 lemon
  • 1 tablespoon of honey
  • Salt

Preparation Of

Soak the beans overnight in warm water. Boil with 2 glasses of water until soft and drain. Put it on hold. After washing and draining the greens in plenty of water, dry them with a vegetable dryer. Chop it coarsely. Mix it all together in a large bowl. Transfer to serving plate. Add beans, olives, pomegranate seeds on it. Mix the sauce ingredients. Add on it. Enjoy your meal.
