Eggplant Bulgur Pilaf Recipe

Materials

  • 3 eggplants
  • 2 onions
  • 2 cloves of garlic
  • 3 medium tomatoes
  • 1 cup of bulgur wheat
  • 1 tablespoon of tomato paste
  • 1 tablespoon of butter
  • 3 tablespoons of oil
  • 1 teaspoon dried mint
  • 1 teaspoon paprika
  • 1 tablespoon of black pepper
  • Salt
  • 2 cups of hot water
  • A pinch of finely chopped parsley

Preparation Of

Peel the eggplants sparingly. Chop into cubes. Soak in salt water for 20 minutes and wash thoroughly. Then dry it. Fry in very little oil and wait. Fry the chopped onions and garlic in oil and butter until they turn brown. Add the garlic and seasonings. After frying for 2-3 minutes, add the bulgur that you washed and drained. Fry for 3-4 minutes. Add the tomatoes and aubergines that you peel and chop. Add salt and water and bring to a boil. Cook on low heat until it takes the water. Enjoy your meal.
