Eggplant Jam Recipe

Materials

  • 1 kilo eggplant
  • 700 grams of sugar
  • 7 glasses of water
  • 1/2 tablespoon of butter
  • 3 pieces of cloves
  • 1 stick of cinnamon
  • Chickpea-sized lemon salt

Preparation Of

Cut off the cap of the eggplants and make scratches on the underside with a knife. Put water in a large pot to cover the eggplants and bring it to a boil. Turn off the stove and put the eggplants in it. Close the lid and leave it in water for 20 minutes, turning it upside down from time to time. Strain the water and wait. Put the water, sugar and butter in the same pot and boil it until it gets a light consistency. Add the eggplants, cloves and cinnamon sticks, boil them for 35 more minutes on low heat and add the lemon salt. Take it off the stove after 2-3 minutes. Empty into jars.
