Erzurum Covered Pita Recipe


  • 1 large glass of water

  • 1 large teaspoon of oil
  • 1 tablespoon of dry yeast
  • 1 teaspoon salt
  • Half a teaspoon of sugar
  • 1 egg (on the yolk, into the white)

Preparation Of

Let’s mix milk, water, oil, sugar, salt and yeast, egg white in a bowl.
Then add the flour gradually.
The earlobe should be slightly softer than the consistency.
After kneading it well, cover it and let it ferment for an hour.
In the meantime, let’s prepare our stuffing and let it cool.
Let’s divide the yeast dough into 5 equal parts and shape it with our hands.
Let’s put our inner mortar in the middle and connect the ends.
Let’s continue the same process until the dough is finished on the greased tray.
Brush them by adding 1 tablespoon of oil to the egg yolk.
This process will make it shiny.
Let’s sprinkle black seeds and sesame seeds on them and bake them in a preheated 190-degree oven until golden brown.
After it comes out of the oven, I cover it with a cloth so that it does not dry out.
