Fellah Meatballs Recipe


For the meatballs;

  • 2 cups bulgur with meatballs
  • 1/2 cup of flour
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon of black pepper
  • Salt

For the sauce;

  • 1 tablespoon of chili paste
  • 5 cloves of garlic grated
  • 1/2 tablespoon of oil-olive oil

For the base;

  • 10 leaves of chard, coarsely chopped
  • 2 tablespoons of pomegranate molasses

Preparation Of

Put the bulgur in a deep bowl, add 2 cups of hot water and let it swell for 10 minutes. In the meantime, to boil the meatballs in a deep pot, add water and salt to 2 inches above the meatballs and let it boil. Throw the chard that you wash and chop coarsely into the boiling water and boil it for 2 minutes. Take the chard that is boiled in a colander and squeeze the juice without over-harming it. Mix it with pomegranate syrup in a bowl and spread it on the base of the serving plate where you will put the meatballs. Add flour and spices to the swollen bulgur and knead well. Take hazelnut-sized pieces from the dough you have kneaded and roll them. Press the center lightly with your finger. Continue until your dough is finished. Put your meatballs in boiling water and boil them. Filter your water. Put it on hold. Add the oil, tomato paste and garlic to the pot. Lightly fry and remove from the stove. Add the meatballs and mix. Remove to serving plate. Enjoy your meal.
