Iskender Recipe

Materials

For the minced meat:

  • 600 gram ground beef (pulled from veal breast)
  • one tablespoon yogurt
  • one piece medium onion
  • 2 tablespoon olive oil
  • 1/2 dessert spoon thyme
  • 1/4 tea spoon allspice
  • one tea spoon black pepper
  • one tea spoon
  • salt

For the tomato sauce:

  • 250 gram tomato puree
  • 1/2 dessert spoon pepper paste
  • one tablespoon butter
  • one tablespoon olive oil
  • 1/2 water glass
  • one tea spoon granulated sugar

For service:

  • 3 piece nail pita
  • 3 tablespoon butter
  • 1/2 water glass water (broth upon request)
  • 8 tablespoon thick yogurt

Preparation of

Grate the onion and squeeze out its juice to use in making doner kebabs. Separate the pulp.
Combine the ground beef, onion juice, yoghurt, olive oil, thyme, allspice, black pepper and salt in a large mixing bowl and knead.
Open cling film or wax paper on the kitchen counter. Take the minced meat in the middle part. 20-25 cm by pressing from the top. Make it a long rectangle. The short sides should not exceed 10 cm.
Wrap the edges with cling film or oiled paper and cover the top. After keeping it in the refrigerator for 1 hour to marinate, put it in the freezer and leave it for 8-10 hours.
Take the meat doner from the deep freezer on the kitchen counter. Hold it from the middle part and slice it thinly so that it is directly proportional to the number of people. Make sure the meat slices are thin.
Fry by turning inside out in a non-stick preheated Teflon pan.
For the tomato sauce; Heat the olive oil and butter in a small saucepan. Add the pepper paste and fry for 1-2 minutes.
After adding tomato puree, water and granulated sugar, cook for 5 minutes on low heat.
Cut the nail pita into cubes after bringing them to a slightly crispy consistency in the preheated oven.
Melt the butter in the pan where you fry the meat to be used in the service. Add water and mix. Take the pita cubes and mix until the water is absorbed.
Take the pitas that are flavored with butter and absorb the juice on the serving plate. Pour some tomato sauce on it and place the meat slices on it. Serve hot without waiting with the addition of tomato sauce and whipped yogurt.
