Kidney Bean Stew Recipe

Materials

  • 700 grams of fresh kidney beans
  • 1 onion
  • 1/2 cup of olive oil
  • 1 carrot
  • 1 potato
  • 3 cloves of garlic
  • 2 diced tomatoes
  • 1/2 tablespoon of tomato puree
  • 1 teaspoon of granulated sugar
  • 3 glasses of hot water
  • 1 tablespoon of ground red pepper
  • Salt
  • Lemon juice
  • finely chopped parsley

Preparation Of

Fry the chopped onion in olive oil until it turns brown. Peel the skins and dice them. Add the carrots and potatoes and mix. Continue frying together for 3-4 minutes. Add the carrots and potatoes that you peeled and cut into cubes and mix. Continue frying together for 3-4 minutes. Add the tomato paste, garlic and zest and mix. Add the kidney beans, sugar, ground pepper, salt and water. After boiling, cook on low heat until the kidney beans are soft. Add lemon juice when cool. Serve with finely chopped parsley on top.
