Purslane Meal Recipe

Materials

  • 1 kilo of purslane
  • 100 grams of minced meat
  • 1 onion
  • 1/2 tablespoon of olive oil
  • 2 tablespoons of bulgur wheat
  • 1 tablespoon of boiled chickpeas
  • 1 capsicum pepper
  • 2 cloves of garlic
  • 1/2 tablespoon of tomato paste
  • 1/2 tablespoon of chili paste
  • 1 tablespoon of water
  • 1 teaspoon paprika
  • 1 tablespoon of black pepper
  • Salt
  • Garlic Yogurt

Preparation Of

Cut off the root parts of purslane and wash it abundantly. Filter your water. Break it by hand without chopping. Put olive oil and ground beef in a pan and fry. Add the chopped onion and garlic. Fry for 2-3 more minutes and add the tomato paste. When it smells, add capia pepper and bulgur and mix. Add purslane and chickpeas and mix. Add spices and water. Cook on low heat until the bulgur is soft. Do not add too much water as the vegetables release their own juice. It tastes much better when it is cooked in its own juice. You can serve it plain or with garlic yogurt. Enjoy your meal.
