Roasted Vegetables Recipe

Materials

  • 5 eggplants
  • 4-5 village peppers
  • 3 capsicum peppers
  • 1 onion
  • 4-5 cloves of garlic
  • 1/2 bunch of parsley
  • 1/3 bunch fresh mint

For the sauce;

  • 1 tablespoon of extra virgin olive oil
  • juice of 1 lemon
  • 1 tablespoon of tahini
  • 2 tablespoons of vinegar
  • 1 teaspoon cayenne pepper
  • Salt

Preparation Of

Roast the eggplants, peppers and onions by turning them on the barbecue or on the stovetop. Of course, this process can be done in the oven. But you can’t get the same taste. In order to easily peel off their shells, leave them in the bag for 10 minutes and peel them. Chop them all and put them in a bowl. Wash the greens thoroughly and drain the water. Finely chop. Chop the garlic and add the eggplants. Mix sauce ingredients. Then add it on. Enjoy your meal.
