Spinach Ravioli Recipe

Materials:

For the dough:

  • 1 egg
  • 3 cups flour
  • 1 glass of water
  • 1- 1.5 teaspoons of salt

For internal mortar:

  • 500 gr. spinach
  • 2 tablespoons of olive oil
  • 4-6 spring onions (if there is no spring onion, 1 medium onion)
  • Half a teaspoon of black pepper
  • 1 teaspoon of red pepper flakes
  • 1 teaspoon red chili powder
  • 2 matchboxes of feta cheese
  • Salt

For the above:

  • 1 bowl of yogurt
  • 2 cloves of garlic
  • 1 teaspoon of olive oil
  • 1 teaspoon red chili powder
  • 1 teaspoon of mint powder
  • Salt

Preparation Of

First, let’s prepare our dough. Put 2,5 water glasses of flour in a bowl and start mixing with a fork in the middle by putting eggs, salt and water in it. When the dough starts to come together, take it to the counter and knead by adding flour little by little. It takes about 3-3.5 cups of flour. The size of the water glass and the egg can affect the amount of flour. Get a dough that is not too hard, a little harder than the softness of the earlobe. Divide the dough into 4 or 5 meringues, cover the meringues for 15-20 minutes and set them aside. While the dough is resting, let’s prepare our stuffing. Put olive oil in a pan and add the finely chopped spring onions. Start by slicing the root parts of the spinach finely and frying it. (If you are going to use dried onions, fry for 2-3 minutes more). Add the chopped spinach leaves and cook with the lid open. Thus, the water will evaporate while the spinach is cooking. When the water runs out and starts to scorch, add salt and spices and fry for 1 more minute. Turn off the stove and take the spinach paste in a bowl to cool. After it is warmed, add the crumbled white cheese and mix. Thus, our stuffing is ready. Take one of the rested meringues and, after kneading a little, roll it out first with a rolling pin and then with a rolling pin as thick as a knife blade. Cut rounds with a not very large glass. (If you wish, you can also cut it into squares.) Put the spinach mixture into the circles you cut. Close your ravioli from the back and form a round shape by joining the two ends. Prepare all the dough in this way. Put water in a large pot and add salt. Cook your ravioli by boiling them in boiling salted water for 15 minutes. Drain the water from the ravioli with a slotted spoon. Drizzle a little olive oil on them so that they don’t stick to each other until you serve them in the bowl you bought.
Put 1 teaspoon of olive oil in a small pan. When the oil heats up, add red chili powder and mix. After a little cooking, turn off the stove. The point you need to pay attention to here is not to burn the pepper and oil. Put garlic yogurt on the ravioli you put on the serving plate and drizzle with the red pepper sauce you prepared. Serve with a sprinkling of mint.
