Spinach Root Turnip Couscous Salad Recipe

Materials

  • 2 cups couscous
  • 3 cups of turnip juice
  • 1 tablespoon of boiled corn
  • 6-7 pickled gherkins diced
  • 5 spring onions finely chopped
  • 1/2 bunch of parsley finely chopped
  • 1/2 bunch dill, finely chopped
  • 4-5 sprigs of fresh mint, finely chopped
  • 1 cup of spinach roots
  • 2 tablespoons of oil
  • 1 clove of garlic grated

For the sauce;

  • 1 coffee cup of extra virgin olive oil
  • 1 coffee cup of turnip
  • 1 teaspoon thyme
  • 2 cloves of garlic grated
  • juice of 1 lemon
  • Salt

Preparation Of

Wash and drain the spinach roots in plenty of water. Add the oil and garlic zest to the pan and mix. Add the spinach roots and sauté for 2-3 minutes. Take it from the stove. Put the turnip juice in the pot. When it boils, add the couscous. Cook until the water is absorbed. Remove the cooked couscous from the stove. Pour into mixing bowl to cool. Add corn, pickles, greens and sauce into the cooled couscous and mix. Take your salad on a serving plate and serve by sprinkling spinach roots on it. Enjoy your meal.
