Spring Rice Recipe

Materials

  • 2 cups of baldo rice
  • 3 cups of vegetable broth
  • 1 tablespoon of extra virgin olive oil
  • 3 spring onions
  • 3 sprigs of fresh garlic
  • 1 tablespoon of fresh peas
  • 1 cup of fresh broad beans
  • 2 carrots
  • 1 handful of artichoke leaves
  • 1/2 bunch dill
  • 2 tablespoons of currants
  • zest of 1/2 lemon
  • Black pepper
  • Salt

Preparation Of

Put the broad beans, peas, artichoke leaves and diced carrots in a saucepan. Add 3 cups of water and boil it. Strain the water into a separate container. Wash the rice with hot water and drain. Put the olive oil in the pot. Add the rice and currants and fry for 3-4 minutes. Add the boiled vegetables, water and salt and bring to a boil. Then cook the rice on low heat. Let it brew for 10 minutes. Finely chop the onion, garlic and dill. Pour over the rice brewed with lemon zest and mix. You can add freshly ground black pepper to the serving plate and serve. Enjoy your meal.
