Stuffed Zucchini Recipe


  • 2 kilos of zucchini
  • 300 grams of minced meat
  • 1 medium onion
  • Half a bunch of parsley
  • half a bunch of dill
  • Two fingers missing from 1 glass of bulgur wheat
  • 2 tablespoons of tomato pepper paste mix
  • Half a teaspoon of olive oil
  • 4 tablespoons of tomato sauce
  • 2 tablespoons of pomegranate syrup
  • 2 cloves of garlic
  • Black pepper
  • Salt
  • Cumin
  • Allspice

Preparation Of

After scraping and washing the outer skin of the zucchini, we remove the core part inside with a pumpkin carving. We chop our onion small and put it in a deep bowl and sprinkle it with light salt. Add the minced meat and chopped dill, parsley and garlic. We add 1 tablespoon of tomato paste, 2 tablespoons of tomato sauce, pomegranate syrup, bulgur and spices and knead. Thus, we obtain our inner mortar. We put our stuffing inside our carved zucchini, leaving one finger missing so that when the bulgur is cooked, it does not overflow. This is how we fill all our stuffing. On the other hand, we prepare our sauce by taking olive oil, 2 tablespoons of tomato sauce and the remaining spoonful of tomato paste into our saucepan. We arrange our stuffed fillings on the tomato paste sauce, and add hot water so that it does not overwhelm. We do not add too much water as the pumpkins will be watered while they are cooking. First it boils quickly and then we leave our stuffing to cook on medium heat. Our meal will be cooked when we realize that the zucchini has turned yellow and softened with the help of a fork. Our cooked stuffing is ready to serve. It is also very good with yogurt or garlic yogurt on the side. If desired, you can use rice instead of bulgur in the filling.
