Zucchini Salad Recipe with Yogurt

Materials

  • 3-4 medium sized zucchini
  • 3–4 tablespoons of olive oil
  • 1/4 bunch of parsley
  • 1/4 bunch dill
  • juice of 1/4 lemon
  • 6 tablespoons of strained yogurt
  • 1 clove of garlic
  • 1 tablespoon of mayonnaise
  • Salt
  • ground pepper
  • walnuts for garnish

Preparation Of

Peel and grate the outside of the zucchini. Saute it in 2 tablespoons of olive oil for 2-3 minutes over high heat. Remove to a plate and cool. Add finely chopped parsley and dill. Mix the strained yogurt, mayonnaise, juice of 1/4 lemon and salt in a bowl. Roast two tablespoons of olive oil, 1 teaspoon of ground pepper and coarsely chopped walnuts on the stove and decorate the zucchini on the serving plate. Enjoy your meal.
